Baking And Pastry SchoolsAt the Orlando branch of the Cordon Bleu Culinary Academy, prospective baking and pastry chefs can earn a degree in 15 months. Unlike the general program, the baking and pastry courses focus on techniques specific to a single area of expertise. Baking and pastry functions include both front and back-of-the-house operations such as presentation and production. Baking and Pastry (Patisserie) ExcellenceThe Orlando program provides students with practical skills required in the food service industry. At the same time, they learn the basics of baking, exciting techniques in pastry making, and food service management techniques required in all areas of the food service industry. The degree earned in this program is an Associate of Applied Science. Graduates of the Orlando program are ready to begin their careers as pastry chefs and/or baker trainees. In West Palm Beach, the Florida Culinary Academy also offers both diploma and associate's degrees in International Baking and Pastry. Their program offers a wide range of both pastry and baking theory and experience. There is significant hands-on experience and the opportunity to work in professionally equipped culinary settings. This program is accredited by the American Culinary Federation. FCA offers programs in candy making, mousses and creams, meringues, Danish pastries, advanced piping skills, and even a history of baking. The basic diploma can be earned in 12 or 18 months while an Associate of Science degree takes either 18 or 24 months.
