Nestle NidoWritten by Sarah BednarNestle Nido is a dry whole milk product that is commonly sold in the Middle East. It is marketed as a way for adults and children to get the nutrition of milk when fresh milk is not available. In Middle Eastern cooking, it is incorporated into many dishes that call for goat milk. Nido is finer in texture than regular dry milk, lending a creamier consistency to casseroles, sauces and puddings. Nestle Nido in Arabic CookingPuddings and vegetable mashes can use Nestle Nido for a creamier flavor when fresh milk is not available. Jarish, a wheat and yogurt casserole, is a good recipe to use it in. Milk-based beverages such as laban and markok, a lamb and pumpkin stew, are made more rich and nutritious with Nido. Nido is available at some Arabic and Latin American stores. It is not widely marketed in the United States, but can be obtained online through Middle Eastern food importers. Grain and flour-based recipes can use it in place of water or milk, and it can also be consumed by the glass. Nestle Nido is a cooking and drinking alternative to fresh milk. It has many uses in Arabic cooking, and its fine texture works into traditional dishes very well. Look for it at your local specialty food market, or at a Middle Eastern food store, where you can get all of your Arabic foods in one place.
