Only the Beluga has the honor of being the most expensive, due only to its extreme rarity. In 19th century America, caviar was not the precious commodity it is today. In fact, it was often given away in bars. The bartenders hoped the salt content would increase patrons’ thirst, causing them to purchase more beer. Over time, as the native American sturgeon have become more endangered and caviar processing experts have become more adept, American caviar has become more precious and now rivals that of Russia and Iran. When purchasing caviar from your local store, do not despair if they do not stock the most expensive type of caviar. Often, less expensive caviar is just as good, if not better than other brands. Just be sure that the caviar is fresh and refrigerated. Remember, when it comes to caviar, price does not necessarily measure good taste. Any gathering can benefit from the addition of caviar. The highest quality should be enjoyed as a first course, with no accoutrements. Lesser grades of caviar can be eaten with blini, a special buckwheat pancake, sour cream and bits of hard-boiled egg or onion. Caviar can be served in special dishes, or sprinkled onto toast as canapés. However you choose to add caviar to your party, the fact remains that it will make a memorable impression.
