Sauce pans are an important part of your kitchen cookware, since they're responsible for producing one of the most delicate parts of a meal. Creating delicious, delicate sauces requires careful attention not only to ingredients, but to temperature as well. Good sauce pans can go a long way in helping you create professional, restaurant-quality sauces.

Qualities of Sauce Pans

The most important quality of any good sauce pan is the material (or materials) it is made with. Cheap, flimsy metal pans simply will not do the trick: they are prone to warping and bending and creating an uneven heating surface. This will cause the center of your pan to be hotter than the sides, which is particularly dangerous for delicate sauces like bearnaise or hollandaise and can cause the sauce to"break."

Some sauce pans are known as "double boilers." These pans contain two separate compartments: one on the top where you place your ingredients, and one below that is filled with water. Heating the upper compartment using the boiling water below is a great way to ensure a perfectly even temperature for your sauce. These pans are particularly useful for melting chocolate.

If you're looking for a stainless sauce pan, there are plenty of them on the market. Just keep in mind that maintaining a stainless pan usually takes some work--it's not enough to cook in it and then expect it to clean itself. You'll want to avoid overheating stainless pans, and you also should try to prevent boil-overs. Events like these can stain or tarnish the less protected outer area of the pan.
