If you cook or bake with any regularly, substituting coconut butter for hydrogenated oils can dramatically improve your health. This benefit is not conferred simply by removing the unhealthy effects of hydrogenated oils such as margarine and shortening. Rather, coconut oil possesses active health benefits that may surprise you.

For years, experts have considered coconut oil the healthiest dietary oil in the world. Its vitamins, antioxidants, and lauric acid have been shown to reduce infections, improve digestion, and reduce the chances of everything from osteoporosis to cancer. It's no wonder that coconut oil is often added to infant formulas in the attempt to maximally emulate the benefits of human milk.

However, only coconut butter than is made with the minimal amount of processing can confer the full range of health benefits. All coconut oil must have most of its water content removed as part of the manufacturing process. Unfortunately, many coconut oils use processes such as bleaching and deodorizing, processes which can dramatically reduce the vitamin and antioxidant content that is so beneficial.

The best coconut oil is manufactured using cold pressing and a distillation process that is based on a centrifuge, rather than heat. This means that if you know where to look, you can find oil that is not only worlds healthier than hydrogenated oil, but also healthier than its competitors.
