While the myriad health benefits of coconut oil have finally become better understood by a health-conscious population, the critical distinctions between organic desiccated coconut oil produced unnaturally and oil that is produced more naturally have been largely ignored. The process from coconut to coconut oil has two major steps. First, coconut milk must be extracted from fresh coconut meat. Once this process is complete, the coconut milk must have almost all of its water content separated away to produce consumable coconut oil.

The problem with some organic desiccated coconut oil is that the drying process it depends upon requires subsequent refinement, bleaching, and deodorizing. These unnatural processes reduce the nutritional value of the oil substantially. With the positive health implications of the most potent desiccated coconut oil, there's simply no reason to settle for anything less than the best.
